History of Sydney Urchins
When I first bought this business, it was all about giving our two sons the chance to live the lifestyle I’d always dreamed of. From a young age, I had my heart set on becoming a commercial diver in the abalone industry. But as I got older, I realized that sea urchins were not only more environmentally responsible—they also gave me the opportunity to help make our oceans healthier. Harvesting sea urchins helps restore those barren white rock areas back into thriving kelp forests, which is pretty special.
We started small—just me diving for sea urchins, and I didn’t even have a boat at the time. Eventually, I upgraded to diving with a boat and began selling the urchins. About four years ago, we took things up a notch and started processing the urchins ourselves. We brought in the knowledge of a former sea urchin processor who had been in the game for over 30 years, which really helped us hit the ground running.
A lot has changed in the last four years. What started as a tiny operation with just three of us—diving, processing, and delivering—has grown into something much bigger. Today, Sydney Urchins is a team of over 30 people, and we’ve just completed a major upgrade to our facility. Our new, state-of-the-art production space is ready for action, and it's already making a big difference in our ability to process at a higher quality and larger scale.
I’ve spent the last couple of years traveling the world, learning from the best and working on perfecting the template for our new factory. The results are already clear: this upgrade has allowed us to elevate both the quality and quantity of our product, and it’s putting us in a great position to stand out as one of the top names in the sea urchin industry.
This new facility is a total game-changer. It’s not just about having the latest equipment—it’s about fine-tuning our processing techniques. We’ve been able to build on a 30-year-old proven method while incorporating fresh innovations that give our Uni a superior, firm texture, a dry finish, and our Kina that sweet taste that everyone loves.
