Our Divers are experts in carefully selecting the perfect Long Spined Sea Urchins to deliver to our processing facility in Woollamia, NSW. This is where the magic continues & our team get to work processing the urchins, only selecting the highest grade roe to pack and ship directly to our customers.

  • What is Uni & Kina?

    Uni and Kina from Sydney Urchins are products of the Long Spined Sea Urchin, native to the waters of NSW, also called the Black Sea Urchin. The only edible part of the sea urchin is their ‘gonads’ or sex organs, often referred to as the roe. The roe is harvested from the urchins hollow shell and eaten in a variety of ways by people all across the world.

    Uni is carefully dried and usually consumed as sashimi. Kina is the same roe as Uni but it is placed in a salty brine during processing to preserve its exquisite flavour and texture.

    Sea Urchin roe can be cooked or eaten raw for the most pure experience of this shellfish. Sea Urchins are salty, a little bit sweet, and have a delicate umami to them. We think that our urchins have the best and freshest flavour, but you'll just have to try them & taste for yourself.
